1. Rinse the rice thoroughly under cold water.
2. In a heavy-bottomed pan, heat some ghee and add the rinsed rice. Stir and cook for a few minutes.
3. Add water to the rice and let it simmer on low heat. Stir occasionally to prevent the rice from sticking to the bottom of the pan
4. Once the rice is half-cooked, add sugar and allow the kheer to simmer until the rice is completely cooked and the mixture thickens.
5. Add cardamom powder and any desired nuts such as almonds, cashews, or raisins for added flavour & texture.
6. Once the kheer reaches the desired consistency, remove it from the heat and allow it to cool. It will thicken further upon cooling
7. Serve the kheer warm or chilled, garnished with more nuts or a sprinkle of saffron for an elegant touch.
