### Saffron Rice Recipe

This delightful saffron sweet rice, also known as *Zarda* or *Meetha Pulao*, is perfect for celebrating Holi with its aromatic flavors and vibrant color.

#### Ingredients:

– 2 cups basmati rice

– 4 cups water

– A generous pinch of saffron strands

– 1 cup sugar (adjust to taste)

– 1/4 cup ghee (clarified butter)

– 1/4 cup milk (optional, for richer taste)

– 1/2 teaspoon cardamom powder

– 1/4 cup mixed dried fruits (like raisins, cashews, and almonds)

– 1/2 teaspoon rose water (optional)

– A few drops of yellow food coloring (optional, for added color)

– Chopped fresh nuts for garnish

Saffron rice or Kesar chawal or bhat, served in a white ceramic bowl, selective focus

#### Instructions:

1. **Rinse and Soak Rice**: Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes. After soaking, drain the rice.

2. **Infuse Saffron**: In a small bowl, soak the saffron strands in a couple of tablespoons of warm milk or water . Let it sit for about 10-15 minutes to release its color and aroma.

3. **Cook Rice**: In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice. Cook until the rice is about 70% done (it should still have a bite). Drain the rice and set aside.

4. **Prepare the Sweet Mixture**: In the same pot, add ghee and let it melt. Add the mixed dried fruits and sauté for a couple of minutes until they are lightly golden.

5. **Combine Everything**: Add the partially cooked rice back to the pot. Pour in the sugar, saffron infusion, cardamom powder, and rose water (if using). If desired, add a few drops of yellow food coloring for enhanced vibrancy.

6. **Cook on Low Heat**: Gently mix everything together, being careful not to break the rice grains. Cover the pot with a lid and cook on low heat for about 10-15 minutes, allowing the flavors to meld and the rice to finish cooking.

7. **Serve and Garnish**: Once done, fluff the rice gently with a fork. Garnish with chopped fresh nuts and serve warm or at room temperature.

This saffron sweet rice is a must-have for your Holi celebrations, adding both color and sweetness to your festivities. Enjoy your delicious creation and have a joyful Holi!

This saffron rice is not just a treat for the palate but also a feast for the eyes, embodying the spirit of Holi with its bright color.
