Ingredients:
– 1 cup sama rice (barnyard millet)
– 2 tablespoons ghee or oil
– 1 teaspoon cumin seeds
– 1-2 green chilies, chopped
– 1 medium potato, diced
– 1/2 cup mixed vegetables (carrots, peas, and beans)
– Rock salt to taste
– 2 cups water
– Chopped coriander leaves for garnish
Instructions:
1. Rinse the Sama rice thoroughly and soak it in water for 15-20 minutes. Then, drain the water and set the rice aside.
2. Heat ghee or oil in a pan and add cumin seeds. Let them splutter.
3. Add chopped green chilies and sauté for a minute.
4. Add diced potatoes and mixed vegetables. Saute for a few minutes until they are slightly tender.
5. Add the drained sama rice to the pan and saute for 2-3 minutes.
6. Add rock salt and water to the pan. Stir well and bring the mixture to a boil.
7. Once it comes to a boil, reduce the heat to low. Cover the pan. Let the pulao simmer for 15-20 minutes. Continue until the rice and vegetables are fully cooked. Ensure the water is absorbed.
8. Once done, fluff the pulao with a fork and garnish with chopped coriander leaves.
